Savour a menu bursting with Caribbean flavour. Start with Local Fish Water from the soup station, or build your own plate from our Organic Green Salad with locally made dressings. The Carving Station features Sugar and Spice Crusted Ham served with House Sauces, Compotes, and Chutneys. From the Grill, enjoy Lemon and Lime Herb Glaze Shrimp, Sweet and Sour Chicken, and West Indian Curry Mutton — all complemented by West Indian Coconut Rice and Peas, Plantain, Spinach and Beef Lasagna, Cheesy Breadfruit Pie, and Loaded Corn on the Cob from the chafers. Don't miss the Pasta Station, where Penne comes with your choice of Chicken, Seafood, or Vegetables in Creamy or Marinara sauce.
Begin with local breakfast favourites — Stew Salt Fish, Jonny Cakes, Bacon and Sausages, and Loaded Fruit Pancakes with eggs made just the way you like them. Then round off the afternoon at the dessert table with Passionfruit Cheesecake, Pineapple Sugary Spice Cake, Lemon Panna Cotta, French Toast Bread Pudding, Coffee and Chocolate Trifle, and Sanctuary Cookies and Cupcakes.
